Cantimpalos is a municipality which numbers 1401 inhabitants, located around Segovia.
The way we call this village today is controversial, one explanation is during the middle ages (XIII° century) this place used to be called Can De Palos then by the time Cantepalos appeared. The originally population started during the XII° century but, the official first day of this place was the 1st June 1247 .

The making Chorizo has always existed but more involved since 1900, when the indusrty of the cold meat started to be more important. Documents make statement of chorizos commercials dealing between 1928 and 1933 from Cantimpalos to Mexico.
